I recently went off a medication I had been taking for the dreaded PCOS. I am one of the lucky women who only ever had a few of the nasty symptoms of this syndrome which reportedly effects 5% of all women and is the number one cause of infertility. I was able to have a baby (thank you God,) and I have few signs, if any, of ever having had it. It's a good thing in the long run for me to be off the medicine, but the side effects of removing this somewhat metabolic regulating pill is wrecking havoc on my system. Hopefully my body will eventually value its independence and adjust.
Picture me as Violet Beauregard, blown up, until she practically popped. I am barely eating anything and still feel like I will burst! Is there anything more frustrating than when your body won't respond and do what you want it to. Such is the life of a pre-disposed fat girl, (pitiful sigh of self-pity.) Since everyone tells me "you have to eat something", I have been creating my own variety of salad recipes. It's fun if you pretend you are the owner of a super cool salad cafe' (in your kitchen.) I call my cafe Chez' Le Rabbit!...which I think translates: TO THE RABBIT! (said with a wink and a grin, and much less self pity ;)
Anyhow.... I have a new concoction that I whipped up on Monday, during lunchtime with my son, which you might like to try:
Chez' Le Rabbit's Baby Spinach Spectacular
- 1/3 bag of pre-washed baby spinach,
- 1/3 a small can of chic peas,
- half a mini-can of mandarin oranges,
- one handful walnuts,
- one handful dried cranberries or cherries,
- several grape tomatoes
- and a teaspoon of Aunt Mids all natural raspberry dressing, (which is not expensive and is totally low-cal!) Aunt Mids is available at your local Kroger's and is made right here in Detroit. Who'da thunk it?
Wha-la! It's a very filling meal for under $5.00 (based on the one bowl portion) and it's under 300 calories. No-guilt and hopefully less puffiness!
I can just feel the self-pity melting away! It is so yummy! We all have our days in the dumps. If you need cheering up or de-puffing...my kitchen is always open!
